I think they are very similar.
This is my interpretation of the two:
A mentor text is one that a child/teacher can refer to in order to try to emulate something that an author does well. Mentor texts are often used for writing because the children are trying to write in the style(s) of real authors.
A touchtone text is one that students can go back to over and over again for many purposes in both reading and writing workshop.
touchtone texts," texts that the children respond to deeply and "stand a chance of sponsoring connections between that text and our children's writing (Calkins, 1994, p. 276).
Some teachers use mentor or mimic texts with their students to give them experience in trying on different voices and styles. In this kind of exercise, students are offered a model text and asked to imitate its structure and language, changing details to relate their own thoughts or experiences.
