I taught adult ESL/EFL classes in Brazil and used a lot of trade books to teach. My students did not think the activities were too elementary ... I think it depends on the book you choose and the level of your students. I did a lot of graphic organizers with them with comparing and contrasting characters or stories. Many fairytales are universal (like Cinderella, Little Red Riding Hood), so it is a good opportunity to teach new vocabulary using a story they are already familiar with. There are so many great nonfiction trade books out there, too, that you could also use to teach vocabulary. Hope that helps ... and good luck!
